This time: Mint Chocolate Cupcakes. If cooking along, you need the following:

• Chocolate Cupcakes: o 1 cup all-purpose flour (125 grams) spooned and leveled o 1 cup granulated sugar (200 grams) o 1/2 cup cocoa powder (45 grams)-I use Dutch processed o 1 teaspoon baking powder o 1/2 teaspoon baking soda o 1/4 teaspoon salt o 1/4 cup vegetable oil (60 ml)-canola oil works too o 1 large egg-room temperature o 1 teaspoons vanilla o 1/2 cup milk (120 ml)-2% or whole milk o ? cup freshly brewed coffee (80 ml) or boiling water

• Mint Buttercream: o 1 cup unsalted butter (226 grams)-slightly softened but not starting to melt o 3-4 cups powdered sugar (330 - 400 grams)-sifted o 1/4 teaspoon salt to taste o 2-3 tablespoons whipping cream (30-45 ml) or heavy cream o 1/2 - 2 teaspoons mint extract o green food coloring (Optional) o chocolate shavings or mini chocolate chips for decorating, optional

It’s happening now, and we are taking this opportunity to share in the solar eclipse together. Thanks to our friends from the Harvard University Astronomer, Smithsonian Astrophysical Observatory, we will enjoy it together here in Community, along with hearing from our own members as they experience the eclipse from their front porch or backyard. Those along the pathway of total eclipse are encouraged to join us from a mobile device to provide real-time commentating. We want your personal insight, and we want to share this event together.
