• 1 pound chicken breasts or thighs, cut into bite-sized pieces
•1 cup buttermilk
•1 teaspoon garlic powder
•1 teaspoon onion powder
•1 teaspoon smoked paprika
•1 teaspoon salt
•1/2 teaspoon black pepper
•1 cup panko breadcrumb
•1/2 cup of all-purpose flour
•1/4 cup grated Parmesan cheese (optional)
•Cooking spray or a small amount of oil for coating
