Casseroles are not just for dinner. You can have casseroles for breakfast, lunch, dinner, and dessert! Who doesn’t love casseroles! Listeners joined us and brought their best casserole recipe to the table.

Making creamy, no-cook mints. Ingredients: • 1 package (3 oz) cream cheese • 1/4 teaspoon mint extract • 2 drops green food coloring, if desired • 4.25 to 4.5 cups powdered sugar super fine or regular granulated sugar for rolling

Listeners joined Courtney as she prepared tuna patties and Apple Brown Betty. Tuna patties ingredients: • 4-3 oz. Cans tuna, drained, rinsed & squeezed dry • 1/2 cup flour • 1/2 cup parsley flakes • 2 teaspoons Old Bay seasoning blend, or to taste • salt, pepper, & garlic powder, to taste • 3 tablespoons Worcestershire sauce • 3 tablespoons grated Parmesan cheese (from the green can) • 2 tablespoons Dijon mustard • 2 tablespoons mayonnaise (not miracle whip) • 1 small bunch green onions, finely sliced • 2 eggs, beaten • 2 cups plain breadcrumbs • oil for frying

Apple Brown Betty ingredients: • 2 cans apple pie filling • 1/2 cup brown sugar • 1 cup chopped pecans • 1 box butter pecan cake mix • 2 sticks margarine, melted • cooking Spray • 9x13 pan
