The “Sankofa” is a metaphorical symbol depicted as a bird with its head turned backward taking an egg from its back. Our call focused on the importance of reaching back to knowledge gained in the past and bringing it into the present to make progress. Everyone was welcome.
Listeners joined Courtney as she prepared tuna patties and Apple Brown Betty. Tuna patties ingredients: • 4-3 oz. Cans tuna, drained, rinsed & squeezed dry • 1/2 cup flour • 1/2 cup parsley flakes • 2 teaspoons Old Bay seasoning blend, or to taste • salt, pepper, & garlic powder, to taste • 3 tablespoons Worcestershire sauce • 3 tablespoons grated Parmesan cheese (from the green can) • 2 tablespoons Dijon mustard • 2 tablespoons mayonnaise (not miracle whip) • 1 small bunch green onions, finely sliced • 2 eggs, beaten • 2 cups plain breadcrumbs • oil for frying
Apple Brown Betty ingredients: • 2 cans apple pie filling • 1/2 cup brown sugar • 1 cup chopped pecans • 1 box butter pecan cake mix • 2 sticks margarine, melted • cooking Spray • 9x13 pan
